Coconut Rice

Ingredients

2 cups rice
2 ½ cups coconut milk
1 cup water
1 tablespoon sugar
1 teaspoon salt
¼ cup raisins (optional)

Directions

Put all the ingredients into a saucepan. Bring the mixture to boil. Turn down the heat cover and simmer the rice for 15 -20 minutes. Makes 4 cups of rice
