1 tablespoon oil
1 onion, diced
1 red pepper, chopped
1 can (15 ounces) corn, drained
1 can (15 ounces) kidney or black beans, drained
1 large can (29 ounces) diced tomatoes
1 tablespoon chili powder or taco seasoning
Sauté onion and peppers in oil. Stir in remaining ingredients and simmer for about 15 minutes.
