2 eggs
1 cup sugar
½ cup oil
¾ cup honey
2 ½ cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup strong coffee
1 teaspoon cinnamon
½ cup craisins (optional)
Preheat oven to 350 degrees. Mix all ingredients together. Grease and flour pretty muffin tins (flower is nice). Put about ½ cup batter in each. Bake for 18 to 25 minutes. Let cool and then take out gently.

I’ve made these three times since this recipe was posted. Once to test it once for Rosh Hashannah and now for Yom Kippur. So far they’ve been GREAT! The first 2 times I made them in full size muffin tins, that I lined with paper cups and the last time I made them in mini muffin tins lined with paper. I had to adjust the cooking time down to 16 minutes, but I think they are the best as mini muffins. I’ve only heard great things about them from my family. I didn’t add the craisins, but they are moist and YUMMY!
Can I make this in cake pans? Will it work? Thanks
Sure, just watch the cooking time, it will take awhile longer, probably 35 to 48 minutes
