Another Cinnamon Challah

I first tasted this challah at my friend Joleen’s home and decided it was a keeper!

3 tablespoons yeast
½ cup sugar
3 cups warm water
½ cup oil
6-7 cups bread flour
Margarine
Cinnamon and sugar

Combine yeast, sugar and water and allow yeast to proof – about 5 to 10 minutes. Whisk in oil. Slowly stir in flour until a dough forms. Knead until elastic and not sticky. Drizzle some oil in the bowl and roll flour in the bowl. Cover with a damp towel and let rise for 1 to 2 hours. Divide dough into 4 pieces. Roll out flat and spread a small amount of margarine on top of the dough. Sprinkle with the cinnamon and sugar. Shape into a loaf and place in a greased loaf pan. Let rise for another ½ hour. Preheat oven to 350 degrees. Bake for 35 to 45 minutes.

    I love your website and all your new recipes each week.
    I made this delicious challah and it came out great but I do have some comments.
    It wasnt as sweet as I expected (I probably didnt put enough cin. and sugar inside) but I was wondering why the recipe has no salt in it..doesnt the salt bring out the sweetness? and if i just added more sugar or some honey to the recipe would that ruin the recipe or would it be okay?

    • This is actually not one of the sweetest challahs and tastes a little more like cinnamon bread than traditional challah. I just thought it was a nice change from the very sweet challahs I usually make. I think salt acts as a leavener and I don’t think it affects the sweetness. I think the recipe would be okay with more sugar but if you’re looking for a sweeter challah, why don’t you just try one of the other recipes on the site and add the cinnamon-sugar mixture to it. I think that would meet your needs better.
