2 medium leeks, white part only
½ tablespoon olive oil
1 tablespoon margarine
½ tablespoon brown sugar
Salt and pepper to taste
1 (10 ounce) package egg noodles
Chop leek into small pieces. Heat olive oil and margarine together and sauté leeks until soft – about 10 minutes. Stir in sugar and mix well. Continue cooking for another 10 to 15 minutes until really soft. Add hot water as necessary to prevent sticking. Meanwhile prepare noodles according to package directions. Toss leeks with noodles and season with salt and pepper to taste.
