2 pounds potatoes, peeled and cut into chunks
1(6.3 ounces) jar pesto
1 tablespoon olive oil
1 teaspoon kosher salt
Place potatoes in a medium-sized pot and cover with water. Bring to a boil, reduce heat and simmer until potatoes are soft – about 20 to 30 minutes. Drain and mix with pesto, salt and olive oil. Serve immediately.
