Spinach Noodle Kugel

spinachnoodle

1-1/2 packages (about 15 ounces) egg noodles, cooked and drained
2 tablespoons onion soup mix
1(10 ounce) package frozen spinach, thawed and drained
1 cup tofutti sour cream
3 eggs
French fried onions

Preheat oven to 350 degrees. Combine all ingredients except the French fried onions and pour into greased 9 x 13-inch pan. Bake for 45 minutes. Remove from oven, top with French fried onions and return to oven for 5 additional minutes.

    I make this but instead of sour cream and french onions I use 3/4 cup oil and corn flake crumbs on top (put the crumbs on before you put it in the oven) I never have a piece left by the time shabbos starts!
