Red Pepper Coulis

3 roasted red bell peppers (you can purchase them already roasted)
3 tablespoons extra-virgin olive oil (use a good quality one if you have)
1 tablespoon red wine vinegar
Salt and pepper to taste

Using a food processor, purée all ingredients. Keep refrigerated.
