Grated Carrot Kugel

carrot-kugel
5 carrots, peeled and cut into chunks
2 cups flour
2 cups sugar
4 tablespoons orange juice
2 tablespoons vanilla sugar
1 cup oil
2 teaspoons vanilla
4 eggs
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon cinnamon

Preheat oven to 350 degrees. Grate carrots in food processor and then combine with all other ingredients. Pour into a greased 10-inch springform pan and bake for 45 to 50 minutes. (You can also make these as muffins if you like)
