Coconut Date Balls

2 eggs, beaten
1 cup sugar
1 cup chopped dates
1 teaspoon vanilla
1 tablespoon margarine
3 cups Rice Krispies
1 cup coconut

In a medium-sized saucepan over medium heat, combine the eggs, sugar and dates. Bring to a boil, stirring occasionally. Reduce heat slightly and simmer for 5 minutes. Remove from heat and stir in the margarine and vanilla. Mix in the Rice Krispies. Grease or wet hands with cold water and form the mixture into walnut-sized balls. Roll in coconut. Store in the refrigerator.

    Do we use unsweetened cocounut shavings or the sweetened kind for this? They look yummy!

    While the assembling can be a bit messy, the outcome was worth it. I used a cookie scoop (similar to a small ice cream scoop) to assure the balls would be the same size. Then I placed 5-6 in the shredded coconut. I found that coconut didn’t stick just by rolling the balls of the date mixture around, while in the bowl. I needed to place a handful of coconut in the palm of my hand, then a date ball in the coconut mound. Then I rolled the ball around, in between my palms. The gentle pressure helped the coconut adhere.
