Slimmed Down Corn Pudding

Revised to slim down by my friend Andrea

2 tablespoons margarine
1/2 cup sugar
1/2 cup egg substitute
1 egg
1/2 cup Flour
1 teaspoon baking powder

1 cup Almond or soy Milk
1 tablespoon vanilla extract
2 cans cream style corn
1/2-1 Can of corn kernals, drained

Cream together margarine and sugar. Mix in egg, flour, baking powder until smooth. Add to the rest of the ingredients and pour into a baking pan, sprayed with cooking spray. Cook in a 350 degree oven for 1 hour and 15 minutes, uncovered until deep golden brown and set.

    I use a casserole dish which is about a 6 cup round. You can use and 8 x 8 square or a round bowl that is oven safe that holds about 6 -8 cups of liquid. I have also made the same recipe in the standard glass oval dish.
