4 tablespoons cilantro
2 tablespoon scallions
1/2 cup craisins
½ cup dried apricots
1 cup couscous, prepared
¼ cup toasted almonds, sliced
Mix all ingredients together.
Dressing
¼ cup canola oil
3 tablespoons lemon juice
1 teaspoon lemon zest
½ teaspoon kosher salt
Whisk dressing ingredients together. Pour over the couscous. Toss well. This is best if made a day ahead of time and the flavors have a chance to blend. Serve warm or at room temperature.
