Peanut Butter Truffles

1 cup margarine, softened
1 cup crunchy peanut butter
2 tablespoons vanilla
3-1/2 cups powdered sugar
2 cups graham cracker crumbs

Cream together margarine, peanut butter and vanilla. Mix in remaining ingredients and beat until smooth. Shape into balls and place on waxed paper-lined cookie sheets. Chill for 1 hour before dipping in chocolate coating [1] and rolling in other toppings (chopped peanuts works nicely here)
