Mango Gazpacho

If you like mango (I do; my husband doesn’t), then you will probably really enjoy this refreshing summer soup.

2 cups diced mango
2 cups orange juice
2 tablespoons olive oil
1 seedless cucumber, diced
1 red pepper, diced
1 small red onion, diced
1 teaspoon minced fresh garlic
1 small jalapeno, minced
3 tablespoons fresh lime juice
2 tablespoons chopped cilantro

Purée mango, orange juice and olive oil in a food processor. Mix with remaining ingredients. Cover and refrigerate until ready to serve.
