Limp lettuce can become crisp again easily. I soak my lettuce in a salt water solution in lukewarm water for halachic purposes, I have noticed that if the lettuce is a bit limp it perks up after the salt water bath. I have experimented with really limp lettuce with the same results. Take apart the leaves, rinsing on both sides. I tear it into salad size pieces but I suppose it will work if you leave the leaves whole. Put a small handful of salt in the bottom of a large bowl and fill with lukewarm water. Submerge the lettuce in the water--put something on top so it doesn't stick out. Leave in the salt water for 10 minutes and rinse. At this point I put it in a spinner, and after the spinner I spread it out on a clean towel and roll up the towel. The lettuce can be stored in the towel in the frig, or taken out and put in ziplock bags with the air sqooshed out. Keeps 4-5 days.
