Mixed Greens with Creamy Dijon Vinaigrette

For the dressing:
¼ cup red or white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
½ teaspoon kosher salt
1 small garlic clove, minced
½ cup vegetable oil
2 tablespoons olive oil
For the salad:
7 cups mixed greens including mesclun lettuce and arugula or any lettuce of your choice
3 scallions, sliced
½ cup craisins
¼ cup toasted walnuts
½ cup sliced red grapes or other fruit such as persimmon or apple
For the dressing: In a blender pulse together vinegar, mustard, honey salt, and garlic. With motor running, slowly drizzle in both oils until emulsified. Season to taste with salt and pepper.
For the salad: In a large salad bowl, mix together lettuce, scallions, craisins, walnuts, and grapes. Add dress and toss. Serve immediately.
