Just in time for Hanukah, the new cookbook CHIC MADE SIMPLE has arrived in stores. Esther Deutsch, food editor for Ami magazine and super accomplished food stylist and recipe developer has launched new debut cookbook called CHIC MADE SIMPLE. It’s chic looking, glossy, bright and beautiful with over 210 photos. The recipes are simple so the title is perfectly fitting. The author’s theory is that food that looks irresistible will also taste as such. Her recipes are designed to look and taste like gourmet cuisine without the fuss. They are simple enough for the novice, fast enough for the busy cook, and impressive enough for the most accomplished.
The book features recipes like Clementine Glazed Chicken and Baby Arugula Salad with Balsamic Soy Vinaigrette (that sounds like it will be a GKC fav!), Sushi Gefilte Fish, and Striped Sesame Teriyaki Salmon (this looks like you catered it!). mazel tov on you beautiful cookbook. my question is — lots of recipes call for soaking fish in milk. could you suggest a dairy free substitute?

Hi Ruth –
The main reason why fish is soaked in milk is because the acids in the milk neutralizes the “fishy” odor of the fish. You can achieve the same results with soaking the fish in water and some lemon juice. Soaking the fish in saltwater is another option, but then you may need to readjust the recipe so your dish won’t be too salty. Good Luck!

Whats a good recipe for raw fish besides sashimi or sushi?

The salmon tartar and tuna tartar recipe in CHIC are delicious and super easy to prepare. They are also the perfect starter for a Shabbos lunch meal since they can be prepared fresh. Enjoy!

There are 3 recipes for sea bass in CHIC plus an option to prepare the Pistachio Salmon with sea bass instead of salmon. Because sea bass is a fatty fish it works well with various methods of preparation like pan searing, baking, grilling etc. I prefer to bake the sea bass since it retains it shape better and allows for prettier presentation,while still maintaining its great flavor.

How do you fix meringue in the summer? I have read that in high humidity not to bother with meringue, yet it is a summer staple for pie. Please help me figure out how to make meringue int he summer successfully.
Hi – Its generally not recommended to make meringue in high humidity since it will cause the meringue to become gummy and chewy. If this happens, place the meringue back in to the oven at 250 F for approximately 25 – 30 minutes to allow the meringue to dry out and crisp up a bit.
